coconut yogurt recipe

I will be making this tomorrow and couldn't wait to share this recipe from the blog SCD & Me. Ill try to post some of my own pictures and hope the critics (kids) will approve. 

Coconut Yogurt
2 cups shredded coconut
3  cups boiling water
3 tbsp honey

Place shredded coconut and boiling water in the blender. 
Let it stand for 5 minutes. 
Add honey and blend for 3-4 minutes 
Strain out all the shredded coconut

Let it cool to 110
Add 1/8 tsp GI pro yoghurt starter
Place in a streilized glass jar

Ferment it in a warm place (about 104F) for 8-10 hours

When it has fermented mix 2 tbsp gelatin powder with 2 tbsp water and stir in. 

Let it cool in the fridge for 6 hours.
