rosemary & lemon chicken thighs recipe



This recipe tastes like sunshine and is a welcome dish on gloomy winter days. There is not much to this recipe other than fresh herbs, Olive oil some salt and lemon. You could use shallots saffron and garlic for more flavor but this one is more picky kid friendly. A certain 3 year old we know is figuring our more foods and becoming a wee bit more picky with the taste buds. I served the dish with broccolini and oven potatoes. Here is the recipe:

Rosemary & Lemon Chicken
4 chicken thighs
1 lemon
handful of fresh herbs-Rosemary and thyme
2 pinches of Sea Salt
pepper to taste
1 tablespoon Olive Oil

Preheat oven to 350 and coat chicken with oil, salt, pepper and herbs and place in a le creuset or other baker. Slice lemon and place over the chicken. Cook covered for about 40 minutes.
