spicy ginger & sesame mango soup



This is an easy hot and sour soup inspired from several dishes put all into one pot.  Here is the recipe:

 Spicy Ginger & Sesame Mango Soup

6 cups Organic Veggie Stock
2 cloves of garlic
1 tbsp grated fresh ginger
1 chopped pok choy or mini Bok Choy
handful Maifun rice noodles
1 tsp sesame oil
3 tbsp Tamari
1 diced ripe mango
2 tbsp sesame seeds
2 chopped green onions including green
few dashes of red pepper oil
optional- teriyaki tofu

Start with vegetable stock on a boil and add garlic, ginger and pok choy. Turn down to a simmer after about five minutes and stir in sesame oil,  1 tbsp tamari and maifun noodles. Once the noodles are done about 3-5 minutes, pour all into a bowl and set aside. In a another bowl add mango, sesame seeds, green onions, red pepper oil, the rest of the tamari and tofu. Toss together and add to the top of served soup.
