citrus salad

Super simple and very yummy to eat, a citrus salad is something for picnics and potlucks.  The only work is cutting the slices from their rind and chopping up some pistachios. Here's my version:

Citrus Salad
2 grapefruits
3 oranges
4 blood oranges
1 juice of lime
a handful of pistachios
a dot of honey
freshly chopped mint (optional)

Cut each fruit from its rind and then slice them into discs. Mix the juice of lime, honey and mint in a container or bowl and then toss with the rest. Top with chopped pistachios. Enjoy!
