I brought these with me to Erin's House last week when they had us over for Dinner (ops, not Diner). If they had a diner in their home that would be pretty cool and serve up the best food around. Any, back on track, these macaroons are the easiest bakery I have ever attempted. Two ingredients and basically no prep not to mention gluten and dairy free. Here is the recipe:
1 bag of unsweetened shredded coconut
1 cup whole coconut milk
Mix ingredients together, and ball each into 2 inch. rounds. Place on natural parchment on cookies sheets and bake for 12 min. at 350º F. They should turn a golden brown when done. Enjoy!
