This is recipe is quick and easy and most things you have on hand for a last minute meal. Its even better if you have a garden full of veggies to choose from but most people will have carrots, celery, onion & garlic in their fridge and rice in their cupboards. I added mushrooms to mine just because I had some on hand. Saute veggies with a high heat tolerant oil like safflower for about 10 minutes meanwhile boil rice in a separate pan. Turn down temp and mix cooked rice with veggies. Add a few dashes of soy sauce and break one egg over mixture. Stir to combine and cook another minute or two. Make sure not to burn egg which to me smells like wet dog and serve!
