camp recipe: Hobo

We have had many a camping trip as of lately and cooking for two picky small ones in the woods can be challenging but hobo is a tried and true recipe that just about everyone will like. The best part about hobo is it can be made veggie, beef or fish. The veggie can change to whatever you have available or pick from your garden. My favorite version is with ground beef since we have freezer full. If you chose the veggie version just add a few splashes of olive oil before closing pocket.

Hobo Recipe with Ground Beef
Ingredients
  • 1 pound ground beef
  • 5 potatoes, peeled and cut into steak fries
  • 4 large carrots, peeled and sliced lengthwise
  • 1 onion, peeled and sliced into rings
  • 1 green or red bell pepper
  • salt to taste
  • ground black pepper to taste
  • 3 garlic cloves chopped

1. Use aluminum foil to create a cooking pocket for all ingredients leaving enough space to close completely together to create a tight seam .

2. start with ground beef on the bottom of the created foil pocket and layer potatoes next, carrots, onion and peppers followed by garlic and salt and pepper.

3. Close pocket and fold over extra foil to seal edges. Cook on hot surface (campfire grill) for approximately one hour depending on fire temp. Make sure the fire is not too hot to burn veggies and its cooked long enough that there is no visible pink on the ground beef to safeguard against food poisoning.


4. Open pocket when done and serve with ketchup and french bread.
