updated classic peanut butter cookies
I made these cookies yesterday on a whim and craving something sweet. Little B is always willing to help if there is something sugary in return. These are the classic peanut butter cookies but with MaraNatha No Stir Organic Crunchy Peanut Butter. I halved my family recipe and made mini cookies. The guilt doesn't feel quite as bad with a couple mini cookies as it does with one or two reg sized ones. Yeah, I know this does not make sense but it does to my brain. I finished these puppies off with a cup of chamomile tea (local if you asked) and the Season finale of Saturday Night Live. Recipe as follows:
Updated Classic Peanut Butter Cookies
Bakes 24 mini cookies
Ingredients
1/2 cup organic unsalted butter-soft
1/2 cup plus 2 tablespoons organic peanut butter-no stir
1/2 cup raw sugar
1/2 cup dark brown sugar-packed
1 teaspoon vanilla extract
1 farm fresh organic egg
1 1/4 cups unbleached flour
1/2 teaspoon baking powder-aluminum free
1/4 teaspoon sea salt
3/4 teaspoon baking soda
First cream together butter, peanut butter, sugars, vanilla & egg and set aside. Next sift together in a separate bowl the flour, baking powder, salt & baking soda. Then slowly add dry ingredients to wet and mix until combined. Ball mixture in the bowl and refrigerate about 45 minutes to an hour. Pull the mixture from the fridge and preheat oven to 375 degrees F. Ball up each cookie to about the size of a half dollar when flattened. Last use the fork for the classic criss cross pattern and bake for about 9 minutes. Pull when light to golden brown.
